I have to share one of my favorite summer salad recipes with y'all.
Grey Grey loves him some orzo chicken salad.
This is what he has to say about it...
I snagged this recipe last summer and have probably made it twelve times since.
True story. Everyone loves it. This is THE summer salad in my opinion-it has all of my favorites. The perfect meal for a summer night. Make it ahead..it gets better as it sits in the fridge. If you are one of my gluten-free people omit the orzo and add more spinach.
Orzo Chicken Salad
½ teas. Cumin
½ teas. Thyme
½ teas. Minced garlic
1 teas. Dried oregano
1 cup olive oil
6 tablespoons wine vinegar
6 tablespoons of fresh lemon
juice
1 ½ teas. Salt
1 teas. Pepper
2 teas. Dijon mustard
***Wisk above ingredients together
and set aside.
¾ lb. orzo
1 bunch spinach torn into bite
size pieces (I usually put more spinach in the salad)
½ cup pine nuts
¾ pitted kalamata olives
1 cup feta cheese
¼ cup sundried tomatoes
½ of a red bell pepper chopped
¼ cup chopped green onion
2 teas. chopped capers
1 roasted chicken or a few chicken breasts –add chicken to salad in bite size pieces. Cook orzo and drain. After it has cooled toss with a little olive oil. Add the rest of the
ingredients-toss. Add dressing a little at a time and toss to coat evenly.
