 This first recipe is a total staple in our household.
It doesn't cost much to make and it's fast and easy.
I created this when Jay and I were living in good ol' Jacksonville
in our cozy little one bedroom apartment. I was so proud of that little
home of ours. We sure didn't have much but we had looooove and a little beagle.
This is the meal that gave this newlywed wifey  just enough kitchen confidence to give the whole cooking thing a try. It was in that little corner kitchen that I faced my culinary fears and never looked back. I cooked my little heart out (burnt my little heart out) those first two years with Jaxy pup at my feet. Sweet times they were.
You see food is never just food to this Italian girl and co.
From a young age my Nonni ingrained the beauty and sacredness of food into the depths of my heart and soul, as she would force feed me with gourmet meals and tote me around town for gelato and pastries.

So now are you ready for this super gourmet recipe that is still dear to my heart???

The Best Ever Taco Meal That Won't Break the Bank...
Super gourmet..eh???!
 
Ingredients:
1 pound ground beef or ground bison or ground turkey
2 tablespoons olive oil
1 to 3 garlic cloves, minced
3/4 cup chopped onion
2-3 cups spinach or kale, chopped
1 can diced tomatoes, drained or 1.5 cup fresh tomatoes, chopped
1 can black or pinto beans, drained
tortillas (optional)
Taco Seasoning:
1 tablespoon chili powder
2 teaspoons ground cumin
2 teaspoons ground coriander
1/2 teaspoon sea salt
1/2 teaspoon pepper
Directions:
In a large skillet over medium heat, add the oil, garlic and chopped onion. Cook, stirring often, until the onion is softened, about 4-5 minutes. Add the ground beef and cook, breaking up the meat into smaller chunks, until it is cooked through, about 5 minutes. Off the heat, drain the grease from the meat.
Return the skillet to the heat and stir in the garlic, taco seasoning, spinach, beans, and tomatoes. Turn the heat to low and simmer the meat mixture for about 10 minutes, stirring occasionally.
Serve taco meat in bowl or tortilla. Top with plain Greek yogurt, avocado and hot sauce!

Pan-Glazed Chicken with Kale and Basil:
Glorious are those one pan meals!!!!
When I made this over the weekend I was out of feta and I
was not up for a run to the store. Next time I'll add it for sure.


Ingredients: 
4-6 chicken breast halves
1/2 tsp salt
1/2 tsp fresh ground pepper
2 tsp olive oil
2 Tbsp balsamic vinegar
2 Tbsp honey
2-3 cups chopped fresh kale
2 Tbsp chopped fresh basil
1 Tbsp feta cheese

Directions:
 Sprinkle both sides of chicken with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat (I actually used an iron skillet, see above). Add chicken; cook 5 minutes or until lightly browned. Turn chicken and cook 6 minutes or until chicken is done. Stir in vinegar, honey, and kale; cook just until kale is wilted. Remove from heat, sprinkle with feta and basil just before serving.
