This is a great banana bread alternative.
My boys went crazy for these cookies!!!
Ingredients:
2 overripe bananas, mashed
2/3 cup coconut oil
1 cup agave
2 teaspoons vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
4 cups oats
Directions:
Combine bananas, oil, agave and vanilla extract and mix
until smooth.
In a separate bowl, combine dry ingredients.
Add dry ingredients (except oats) to wet and stir to
combine.
Stir in oats one cup at a time.
Spoon dough onto a greased cookie sheet about 1
tablespoon at a time. Spray the back of a spoon with nonstick cooking spray and
then press down each dough ball to form a flatter cookie
Bake on 350* for 10 minutes
If you give a Minky a cookie...
he's going to ask for some almond butter to go with it!!!
