What I'm doing with these today...
Banana Bran Muffins
These are always a huge health filled hit!
(*My substitutions)
2 cups flour (*whole wheat flour)
2 cups unprocessed bran
1/2 cup sugar (*agave syrup)
1/2 cup flax seed
2 eggs
3 med ripe bananas
3/4 cup chopped walnuts
1 cup of raisins or dried cranberries
2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 cups milk
1/2 cup oil (*apple sauce)
In large bowl mix flour, bran, sugar, nuts, soda,
salt, and cinnamon.
In another bowl mash bananas, beat in eggs, milk, and oil.
Stir in flour ingredients just until moistened.
Grease and fill muffin tins 3/4 full.
Bake 15 mins @ 425*

Banana Chocolate Chip Muffins
1 3/4 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup vegetable oil
1/2 cup plain yogurt
1 teaspoon vanilla extract
1 cup mashed ripe bananas
3/4 cup semisweet chocolate chips
In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
In another bowl, combine the egg, oil, yogurt and vanilla.
Stir into dry ingredients just until moistened. Fold in bananas and chocolate chips.
Fill greased or paper-lined muffin cups two-thirds full. Bake at 350* for 22-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
