My New Creation:
Couscous Greek Salad!
you will need...
Israeli aka Pearl Couscous (I use Trader Joe's)
Feta Cheese
Olive Oil
Fresh Lemon Juice
Oregano
Salt/Pepper
Cucumbers
Kalamata Olives
Red Onion
Marinated Artichoke Hearts
Cherry Tomatoes
Red Bell Pepper
*Any other veggies you love in a summer salad
1. Cook the couscous on stove top-directions on back of the box.
2. Transfer to large bowl.
3. Chop up veggies-leave tomatoes whole. Add to couscous.
4. Add feta, olive oil, oregano, and salt/pepper.
5. Squeeze fresh lemon juice over the salad and mix.
6. Chill before serving.
It's the best!
