Big Hit: Soft Pumpkin Cream Cookies!

I have been on the hunt for a new pumpkin cookie recipe. Done. These cookies are everything. I am adding them to my tried & true pumpkin treats. This is just one of the many recipes that I have collected from my new favorite food blogger- Julie @ Lovely Little Kitchen. Love her recipes. My little farmer and his baby chicken will be delivering these to our sweet neighbors Friday night. They deserve all the pumpkin cookies in the world after enduring the many shenanigans of our beagle hounds- they be craazyy!


Ingredients:
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups sugar
1 stick of softened butter
1 cup pure pumpkin
1 egg
1 teaspoon vanilla
 
Cream Cheese Filling:
4 oz softened cream cheese
1/4 cup softened butter
1 1/2 cups powdered sugar
1 teaspoon vanilla
 
Directions:
Preheat oven to 350* and grease baking sheets (I use parchment paper).
 
In a medium bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.
 
Beat sugar and butter with mixer, then blend in pumpkin, egg and vanilla.
 
Gradually mix in dry ingredients.
 
Refrigerate dough for a few hours. Then form into 1 inch balls.
 
Bake for 10 minutes. Cool before filling.
