The view out my kitchen window as I made
dinner last night...
I love catching these two together in their
own little world.

I was trying not to get too distracted
as I made my new favorite recipe,
courtesy of my adorable mother-in-law.
Isn't exactly soup weather-
but this is just so good I had to share.

Italian Sausage Soup with Tortellini
1 pd Italian Sausage
2 cups meat or cheese tortellini
1 cup chopped onion
2 cups chopped, seeded, peeled tomatoes
1 cup thinly chopped carrots
2 garlic cloves, sliced
1 1/2 cups zucchini
1 med green bell pepper diced
3 tab chopped parsley
5 cups beef broth
8 oz can tomato sauce
1/2 cup water
1/2 cup red wine
1 tab basil
1/2 tab oregano
grated parmesan cheese

Remove casing from sausage and brown in a dutch oven, breaking it into chunks.
Remove sausage from pan and drain.
Saute onion and garlic until tender.
Add broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage.
 Simmer uncovered 20 minutes.
Skim off fat, stir in zucchini, tortellini, parsley, and green pepper.
Simmer covered 35 minutes.
Sprinkle parmesan cheese on each serving.
